Today's waffles are Mochi waffles, made with mostly rice flour. The recipe I tried used about 2:1 Mochiko to AP, will have to try using only rice flour another time.

This recipe is crispier and more chewy. The ones out of the mini iron are very close to cookies.

This all is making me want a thin iron such as you'd make waffle cones with.

I am very aware that I am abusing #waffles as a coping mechanism btw.

Four Mochi Waffles on a cooling rack with the box of Koda Farms "Mochiko" sweet rice flour at the rear. As the batter is thick, the waffles are round and do not fill up the entirety of my square waffle irons while baking. They are a lovely and fairly uniform golden brown, except at the edges, where they have a lot of whiteish nubs, again because the thick batter doesn't make contact with the iron. Like all waffles, they are very delicious, and if you're ever in the Gimli area, you should come by for some.

We had a lovely evening with friends last night and brought dessert. I knew there were some limitations due to allergies, so in the thinking process I chose to go with super simple truffles/mini torte balls. And then @WTL suggested the seasonal favourite homemade Belgian waffles.

The plated dessert with freshly puréed mango and persimmons and fresh blackberries from our @oddbunchcanada box; the homemade Belgian Waffles and the Sweet Potato Truffle/Torte, topped with some coconut whipped topping provided by our hosts!
